Eat Your Greens!


I love greens so much! All of them. They are super detoxifying and alkalizing, and high in fiber, iron, calcium, and vitamin A. The versatility of greens allows them to be eaten during all meals: breakfast, lunch and dinner (including snacks!).

You can cook greens, chop them up and eat them raw in a salad or blend them in your favorite smooth.

Sautéed Greens

1 bunch greens of your choice (kale, chard, collards, mustard greens)
1 Tbsp. olive or coconut oil
2 cloves of garlic, peeled and minced
2 Tbsp. coconut aminos
1 tsp. black pepper

Rinse greens well. Tear or cut leaves away from stems and discard stems. Coarsely chop.

Heat a large skillet over medium heat. Cook garlic in oil briefly, and then add greens, a few handfuls at a time, stirring in between.

Stir in coconut aminos and pepper. Cover. Cook until just tender, 2-10 minutes, depending on the type of greens and your preference.

Blueberry Banana Peanut Butter Smoothie

Even thought it’s fall, I still love a smoothie!  This simple recipe is has been one of my favorite for a while.  Smoothies are the healthiest fast food of all.  I like to drink it as an afternoon snack or a super quick breakfast.

Blueberry Banana Peanut Butter Smoothie
Makes 1 Smoothie

1 ripe banana
1-1 1/2 cups of unsweetened almond milk
1/2 cup blueberries, fresh or frozen
1 Tbsp. peanut butter
1 cup ice

In a blender place all ingredients and turn on low then slowing turn up to medium then high. Once your ice is blended, it’s done. Pour in tall glass or jar with lid to take it on the go!
